This one is a favorite in my house, and I love it because it's so simple, quick, and easy to make. I originally got the recipe from My Daily Moment, only their quantities didn't work as the instructions suggested, so I altered it.
Franks & Beans Casserole.
Ingrediants:
Chili with Beans (amount to personal taste, (recommended: 2-4 cans 15oz each)
16 oz pkg of hotdogs
8-10 tortilla wraps (1 for each hotdog)
Shredded Cheddar cheese
Instructions:
Spread some chili into the bottom of a 13x9 pan, usually 1-2 cans (15 oz).
Wrap each hotdog in a tortilla wrap and place seam side down on top of the chili.
Cover wrapped hotdogs with more chili, again usually 1-2 cans (15 oz).
Now here you can top it with cheese and bake, or you can leave the cheese until after it's baked.
I usually have the cheese available for adding as everyone dishes their plate, because in my family of 5 we all have different tastes as to the amount of cheese we like on our food. If the cheese is added as soon as the plate is dished it will still melt nicely.
Either way:
Cover with foil, making sure the foil doesn't touch the top.
Bake 425 for 30 minutes.
Healthier version options (for those who want it):
If you need a lower fiber diet, then use the chili without beans.
Substitute a turkey chili.
Substitute a poultry based hotdog (all chicken, turkey, etc).
Use multi-grain or whole wheat wraps instead of the corn or flour (white) ones.
Make sure your cheese is made with 2% or skim milk, personally I use the 2% and it tastes great.
